Dedicated Servers ?
how much traffic do my sites have to generate to have a Dedicated Server for them?

There are a couple of things that play an important role in this:
1. Traffic - How much bandwidth are you pulling? What plan are you currently on? What kind of growth do you think you will get over the next 2 - 3 months? (do you expect?) 2. Resources - How much resources your site needs, CPU / Memory, what plan are you on currently? Answering the above questions will answer if you need to upgrade to a Dedicated Server or not

Usually, you'll go Shared -> VPS1 -> VPS2 (more RAM) -> Dedicated. HostICan can assist you the entire way. Even if you need load balancing after you outgrow the dedicated box.
