Are you only doing one site on the dedicated box? If yes, then the backup wizard is perfect for a dedicated server.
There are third party companies that will also store your backups offsite via transfers as well, but I dont have any recommendations. I will be looking into that once I have over 10GB of space used.

(HIC) is going to have a feature like that so thats up coming here too. It will be part of our "HostICan Extra" package that we will be offering sometime in shortly.
